Yield: 4 servings
Season catfish with salt, pepper and paprika.
In a large nonstick skillet, melt butter and saute catfish for 3 minutes; add apple and celery. Cook 3 to 4 minutes more or until fish flakes with a fork (145 degrees F.) Remove catfish; keep warm.
Add water to the same skillet; bring to a boil. Stir in dry stuffing mix and seasoning packet (if one is included with the stuffing mix). Cover and let stand 5 minutes.
Serve stuffing with catfish. Garnish with apple wedges.
