Yield: Makes 4 servings
1. Prepare Rice-A-Roni as package directs, stirring in corn and bell pepper during last 10 minutes of cooking.
2. While Rice-A-Roni is simmering, shape beef into four 1/2-inch patties.
3. In lightly greased second large skillet, cook beef patties over medium heat, about 4 minutes on each side or until desired doneness. Season with salt and pepper, if desired.
4. Serve rice topped with cooked beef patties, salsa and sour cream, if desired.
