Yield: 4 servings
Heat oven to 350 degrees F.
Coat a 2-quart casserole dish with nonstick cooking spray.
Reserve 1/2 cup cheese for topping.
In a large bowl, combine the remaining cheese (1 1/2 cups), rice, cilantro, salsa and water; mix well. Spoon into prepared baking dish and spread evenly across the dish.
Arrange chicken breast halves over rice mixture. Cover with foil. Bake at 350 degrees for 55 to 60 minutes or until chicken is done.
Uncover; sprinkle with remaining cheese and bake, uncovered, for 5 minutes or until cheese is melted.
