Cornish Game Hens with Sweet Potato Stuffing

Yield: Serves 4

Ingredients

Directions:

Thaw Cornish game hens in refrigerator.

Peel, cube and boil sweet potatoes until they are soft; approximately 25 to 30 minutes. Drain potatoes.

Mash with egg, butter, and spices. Stir in pecans.

Stuff Cornish hens and bake until the breast reaches an internal temperature of 170 F. and center of stuffing reaches 165 F.
